With an increasing global population, the consumption of plant-based protein products may be more sustainable than traditional animal meat.<\/p>\n\n\n\n<p>The main ingredients used for current plant-based products, such as the Impossible Burger or Beyond Meat, are wheat gluten, soy, and pea proteins. These proteins are usually heavily processed, and have led to concerns around:<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p style=\"background-color:#84091d\" class=\"has-text-color has-background has-white-color\">Food allergens (particularly for soy and gluten)<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<p style=\"background-color:#84091d\" class=\"has-text-color has-background has-white-color\">Reduced bioavailability of nutrients<\/p>\n<\/div><\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p style=\"background-color:#84091d\" class=\"has-text-color has-background has-white-color\">Unappealing sensory properties.<\/p>\n<\/div>\n<\/div>\n\n\n\n<p>So, the hunt for novel plant-based alternatives that are both nutritious and delicious is ongoing.<\/p>\n\n\n\n<h2 class=\"has-text-color wp-block-heading\" style=\"color:#098470\">From <strong>Land to Sea: An Untapped Potential<\/strong><\/h2>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>Algae is a novel plant-based protein that is gaining interest. Algae includes microalgae, such as Spirulina, and macroalgae, commonly known as seaweed.<\/p>\n\n\n\n<p><a href=\"https:\/\/www.taylorfrancis.com\/chapters\/edit\/10.1201\/b17540-11\/marine-algae-global-food-industry-maria-helena-abreu-rui-pereira-jean-fran%C3%A7ois-sassi\">Algae<\/a> <a>is <\/a>highly nutritious &#8211; it is full of fibres, vitamins, minerals, and protein, and has a low fat and sodium content. Microalgae, like Spirulina, usually come in the shape of <a href=\"https:\/\/link.springer.com\/chapter\/10.1007\/978-94-007-7494-0_11\">supplement pills or powder<\/a>. Specifically, <a href=\"https:\/\/www.fao.org\/3\/i3107e\/i3107e.PDF\">statistics from the FAO<\/a> showed that over a whopping 20 million tonnes of seaweed was produced worldwide from aquaculture in 2011, with 75% going into the food industry.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong><span style=\"color:#098470\" class=\"has-inline-color\">Umami? What is that?<\/span><\/strong><\/h2>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:33.33%\">\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<p>A defining sensory attribute of seaweed is its unique umami flavour. But what&#8217;s umami? He found out that this taste occurred most strongly in \u201cdashi\u201d prepared from kelp (a type of seaweed). He also discovered that this taste was due to the glutamates present in the kelp. Thus, he coined this taste \u201c<a>umami<\/a>&nbsp;\u201d. Other foods such as mushrooms and food additive MSG impart strong umami flavours.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.ajinomoto.com\/cms_wp_ajnmt_global\/wp-content\/uploads\/jpg\/Discovery-of-Umami.jpg\" alt=\"In 1908, Prof. Kikunae Ikeda identified glutamate as the key compound that gives kombu seaweed its umami flavor.\" \/><figcaption><em>Figure 3: The discovery of the umami taste (Infographic from <\/em><a href=\"https:\/\/www.ajinomoto.com\/umami\/discovery-of-umami\">Ajinomoto<\/a><em>).<\/em><\/figcaption><\/figure>\n\n\n\n<h2 class=\"has-text-color wp-block-heading\" style=\"color:#098470\"><strong>Current Consumer Perceptions in the West: Challenges in Acceptance of a Novel Food<\/strong><\/h2>\n\n\n\n<p>Seaweed is an essential ingredient in Eastern cuisine: seaweed rice rolls (kimbap) from Korea, seaweed miso soup from Japan and seaweed salad from China would not be the same without the seaweed! More recently, seaweed is also emerging in Western cuisine, like seaweed pasta. Furthermore, there is no common ingredient in Western cuisine that resembles the umami taste. Lastly, many Western consumers are simply unfamiliar with seaweed as a food,<\/p>\n\n\n\n<h2 class=\"has-text-color wp-block-heading\" style=\"color:#098470\"><strong>Seaweed for Western Consumers \u2013 Not All Hope is Lost<\/strong><\/h2>\n\n\n\n<p>We know that seaweed is not only nutritious and a sustainable food ingredient, but also provides a unique flavour to foods. So, how can we get more Western consumers to try it?<\/p>\n\n\n\n<p>Firstly, <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S1878450X19301453#:~:text=Data%20are%20collected%20from%20a,using%20a%20web%2Dbased%20survey.&amp;text=Study%20findings%20show%20that%2076,is%20willing%20to%20eat%20seaweed.&amp;text=For%20several%20clusters%2C%20seaweed%20characteristics%20and%20product%20availability%20are%20important%20drivers.\">consumers need to be informed<\/a> about seaweed. This includes seaweed\u2019s health and sustainability aspects, but also its unique taste and affordability. By exposing consumers to seaweed repeatedly, they become familiar with its taste. Increasing familiarity, and associating seaweed with more familiar foods such as seafood, also <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0195666320316809\">increases its consumer acceptance<\/a>.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:66.66%\">\n<p>Recent <a href=\"https:\/\/doi.org\/10.3390\/foods11193052\">research<\/a> also showed that young Western consumers(n=1403) find seaweed more appealing as a snack option (87.7%) compared to a full meal (30.7%). Seaweed snacks are usually roasted, giving it an appealing crispy texture instead of the slimy texture people generally associate with seaweed.
